A smooth, comforting tomato soup finished with cream for a rich and cozy bowl of warmth.

Ingredients

  • 2 tablespoons (30 ml) olive oil

  • 1 medium onion, chopped (150 g)

  • 3 cloves garlic, minced

  • 2 tablespoons (30 g) tomato paste

  • 2 cans (28 oz / 800 g) crushed tomatoes

  • 2 cups (480 ml) vegetable broth

  • 1 teaspoon (5 g) salt

  • 1/2 teaspoon (2 g) black pepper

  • 1 teaspoon (5 g) dried basil

  • 1/2 teaspoon (2 g) dried oregano

  • 1 cup (240 ml) heavy cream

Instructions

  • Sauté onion in olive oil until soft.

  • Add garlic and tomato paste; cook briefly.

  • Stir in tomatoes, broth, and seasonings.

  • Simmer for 20 minutes.

  • Blend until smooth.

  • Stir in cream and heat gently.

Notes

For freezing, prepare the soup without cream and add it after reheating. Adjust thickness with broth if needed.
