Ingredients

  • 2 cups (360 g) cooked sushi rice

  • 2 tablespoons (30 ml) rice vinegar

  • 1 tablespoon (12 g) sugar

  • 1/2 teaspoon (2 g) salt

  • 8 oz (225 g) kani, shredded

  • 1/3 cup (80 g) mayonnaise

  • 1 teaspoon (5 ml) soy sauce

  • 1 teaspoon (5 ml) sesame oil

  • 1/2 teaspoon (2 g) sugar

  • 1/2 cup (75 g) diced cucumber

  • 1 tablespoon (9 g) sesame seeds

  • 4 sheets nori

  • Optional: sliced avocado

Instructions

  • Season rice with vinegar, sugar, and salt; set aside.

  • Mix kani, mayonnaise, soy sauce, sesame oil, and sugar until creamy.

  • Spread rice on nori, add kani mixture and cucumber.

  • Roll tightly and slice into pieces.

  • Sprinkle with sesame seeds and serve.

Notes

Serve fresh for best texture. Can also be enjoyed as a sushi bowl or layered dish for easy preparation.
