Juicy, flavorful roasted chicken with a bold garlic, paprika, and herb marinade—perfect for a family dinner.

Ingredients

  • 1 whole chicken (4 lbs / 1.8 kg), cleaned

  • 4 cloves garlic, minced

  • 2 tablespoons (30 ml) olive oil

  • 2 tablespoons (30 ml) soy sauce

  • 1 tablespoon (15 ml) lime juice

  • 1 tablespoon (6 g) smoked paprika

  • 1 teaspoon (2 g) ground cumin

  • 1 teaspoon (2 g) dried oregano

  • 1 teaspoon (2 g) salt

  • 1/2 teaspoon (1 g) black pepper

  • 1/4 teaspoon (1 g) cayenne pepper (optional)

  • 1/4 cup (8 g) fresh cilantro, chopped

  • Optional sides: roasted potatoes, rice, salad

Instructions

  • Preheat oven to 425°F (220°C).

  • Mix garlic, olive oil, soy sauce, lime juice, paprika, cumin, oregano, salt, pepper, and cayenne for marinade.

  • Rub marinade all over chicken, under skin and inside cavity. Marinate 30 min–4 hours.

  • Roast chicken 50–60 minutes until internal temp reaches 165°F (74°C) and skin is golden.

  • Rest 10 minutes before carving. Garnish with cilantro and serve.

Notes

Marinate longer for deeper flavor. Use a meat thermometer for perfect doneness. Can be grilled for a smoky variation.
