1 whole chicken (4 lbs / 1.8 kg), cleaned
4 cloves garlic, minced
2 tablespoons (30 ml) olive oil
2 tablespoons (30 ml) soy sauce
1 tablespoon (15 ml) lime juice
1 tablespoon (6 g) smoked paprika
1 teaspoon (2 g) ground cumin
1 teaspoon (2 g) dried oregano
1 teaspoon (2 g) salt
1/2 teaspoon (1 g) black pepper
1/4 teaspoon (1 g) cayenne pepper (optional)
1/4 cup (8 g) fresh cilantro, chopped

Preheat oven to 425°F (220°C).
Mix garlic, olive oil, soy sauce, lime juice, paprika, cumin, oregano, salt, pepper, and cayenne for marinade.
Rub marinade all over chicken, under skin and inside cavity. Marinate 30 min–4 hours.
Roast chicken 50–60 minutes until internal temp reaches 165°F (74°C) and skin is golden.
Rest 10 minutes before carving. Garnish with cilantro and serve.
