2 large boneless, skinless chicken breasts (about 1 pound / 450 g), diced
1 tablespoon (15 ml) olive oil
4 cloves garlic, minced
1 teaspoon (5 g) paprika
1/2 teaspoon (3 g) dried oregano
1/2 teaspoon (3 g) salt
1/4 teaspoon (1 g) black pepper
1 tablespoon (15 ml) lemon juice
1/2 cup (120 g) plain Greek yogurt
1/4 cup (60 ml) mayonnaise
2 cloves garlic, minced
1 tablespoon (15 ml) lemon juice
2 tablespoons (8 g) chopped fresh parsley
1/4 teaspoon (1 g) salt
1/4 teaspoon (1 g) black pepper
4 large flour tortillas (10-inch / 25 cm)
1 1/2 cups (170 g) shredded mozzarella cheese
1/2 cup (60 g) shredded cheddar cheese
1 cup (40 g) shredded lettuce
1/2 cup (75 g) diced tomatoes
Heat olive oil in a skillet and cook diced chicken for 4–5 minutes. Add garlic and seasonings and cook until chicken reaches 165°F (74°C). Stir in lemon juice.
Mix Greek yogurt, mayonnaise, garlic, lemon juice, parsley, salt, and pepper to make sauce.
Spread sauce on tortillas. Add chicken, cheeses, lettuce, and tomatoes.
Fold and roll wraps tightly.
Toast in skillet 2–3 minutes per side until golden and cheese melts. Slice and serve warm.
